香兰素 VANILLIN
化学名3-甲氧基-4-羟基苯甲醛,化学式: C8H8O3。白色或微黄色针状结晶,熔点为81-83℃,沸点284℃,闪点大于147℃,微溶于水,溶于乙醇和香料中。具有甜香带粉气的豆香,微辛但较干,香荚兰香气及浓郁的奶香,留香持久。
